At
the end of a particularly slow second
fermentation, the vintage wines mature
for many years in the cool darkness
of the Reims cellars, dug from the
chalk during the last century.
Our
Special cuvées and larger bottles,
which are the pride of the house,
are laid down in our 12th Century
cellars in Urville.
At
the end of a predominantly manual
"remuage", the bottles undergo dosage
following disgorgement : a liqueur
(made according to a secret family
formula) which has been aged in oak
and glass demijohns is added to give
yet another Drappier touch.
After
several months, a final tasting decides
when the wines are ready to be released
for sale.
